Cook the Perfect…by Marcus Wareing deconstructs a mix of classic and contemporary recipes so that home cooks achieve perfect results every time.  Wareing, the executive chef at two Michelin-rated London restaurants, believes that there is more to know about a recipe than what’s written down.  He set out to create a cookbook that builds the foundations of good cooking skills while explaining what guarantees success for different types of recipes and why.

What makes Cook the Perfect…different than other cookbooks?  It begins with Wareing’s 10-step Charter for Success, simple steps every chef should follow when preparing a recipe.  Each of the 80 recipes in Cook the Perfect… includes a Key to Perfect tip with photographs that boils down the key cooking technique for that recipe into even smaller steps.  However, if things don’t go according to plan, there is an All is Not Lost section with instructions on how to easily salvage a recipe.  For example, add a handful of sugar into a bowl of whisked egg whites if they curdle before they are added to pancake batter.

From French Onion Soup and Braised Pork Chops to Sautéed Potatoes and New York Cheesecake, Cook the Perfect… includes the essential recipes every home cook should have in his or her repertoire.  It also features more eclectic recipes like Cucumber and Yogurt Gazpacho, Sichuan Chicken and Chocolate-Dipped Meringues, plus the recipe for Wareing’s perfect Custard Tart, which he prepared for the Queen’s 80th birthday lunch in London in 2006.
